Sushi Den was born in 1985 when Toshi, who had been a chef in Tokyo and Los Angeles came to Denver to start the sushi restaurant. Toshi is the heart and soul of Sushi Den. Although soft-spoken, he communicates with the senses. Sushi Den is a feast for the eyes as well as the palette, and is the gathering place of Denver’s cutting edge.

Not one to rest on his laurels, Toshi continuously raises the bar and sets the standard for high quality sushi, not only in Denver but throughout the United States. The adherence to quality at Sushi Den has never wavered in all these years, a remarkable accomplishment for any restaurant. The Zagat Survey rates Sushi Den as one of the most prestigious Sushi and Japanese restaurants in the United States. Sushi Den remains on the leading edge of Japanese cuisine, not only in Denver but nationally.

Sushi Den’s most innovative accomplishment is flying in fresh fish from one of Japan’s largest fish markets, from the city of Fukuoka on Kyushu Island, close to the Japanese hometown of Sushi Den’s founders. With sister restaurant, Izakaya Den, next door serving global cuisine as well as sushi under it’s glass roof and Sky Bar, and “little brother” Ototo opening it’s doors in 2015, with a more casual ambience, raw bar and robata grilled skewers, as well as a premium sake list, they form a trifecta to honor Japanese cuisine on the “Den Corner”.

With an incredibly dedicated and talented staff of over 200, plus family members in Denver and Japan, the Sushi Den vision has taken the restaurant to one of the top sushi restaurants in the country.
